Owner of Takasago sushi
Was born on 25th December, 1965. Graguated from Hosei University with a degree in Business Administration. After Yuuki graduated from the college, he had trained at Umegaoka Midori Sushi for several years, then joind to Takasago sushi as a second generation owner.He holds several professional certifications, including sushi cusine speciality chef.

Won a silver award of the National Sushi Technology Competition in 1998. In 1999, the shop was demolished and rebuilt for two years due to rezoning by the Tokyo Metropolitan Government. During that time, Yuuki moved to Nashville, Tennessee, U.S.A., and trained under the Shintomi Sushi. After went to Japan, Yuuki restarted new chapter of Takasago-zushi and then won the "TV Champion Sushi-Roll Artisan Championship" held and broadcasted by TV Tokyo in 2004. Since then, Yuuki has appeared on numerous TV programs, including "Burari Totyuu-gesha no tabi("Travel with train stopovers")" and "Ariehen... (Means "No way" in Kaisai dailect)". Currently, he stands at the sushi bar with his motto, "Serve a best moment for local customers" . He continues to create Edomae style sushi as a local-based sushi chef.
